Established cheese-makers Westcombe Dairy in Somerset expanded into Charcuterie when realising the potential advantages in the squaring the circle of pig farming, cheese-making and their sideline in starter-culture sales. They use the waste whey from cheese production to feed and fatten their Tamworth pigs and hired chef-butcher Paul Burton to manage the day to day production. The recently launched line up of Charcuterie includes Lardo cured with sea salt, garlic, herbs & spicesSaucisson and Air-Dried Ham.
