Barry Walker of The Hampshire Salami Company takes a nose to tail approach, curing and using a whole pig for his wide range of Charcuterie before starting on the next one. He sources free-range pork from local farms and smallholders and take inspiration from traditional, regional Italian recipes. Products include Porchetta di Testa, a stuffed, cured and cooked Hampshire hog's head and a chilli & fennel spiked Hampshire Black Salami with an unusual black wax exterior.
