Steve and Liz Pearce of Southover Foods launched their new retail brand Southover Sussex Cured in 2019. They cure and prepare their meats by hand in Brighton, using recipes and techniques that have evolved and passed down through five generations of butchers. Their range of beef products includes New York Style Pastrami and Salt Beef. Best-selling pork products include Honey Roast Farmhouse Ham, Wiltshire Dry Cure Gammon and Smoked and Unsmoked Back Bacon.
