Launched in 2015 by self-taught producer Ross Mitchell, small scale production is at the heart of London Smoke and Cure, a smokery based in South London that specialises in Bacon, Charcuterie and cold-smoked sashimi-grade salmon. It uses ethically reared, free-range mature Gloucester Old Spot pigs for all their pork Charcuterie. Bacon, such as London Black Streaky, marinated in London Porter & Molasses, is aged to create a “deeper, funkier flavour”  Mildly smoked Culatello, Koji-cultured Bresaola and Sweet Fennel Chorizo Snacking Sticks join the expanding range.
