Ispini Charcuterie, in Northern Ireland, was set up in 2016 by Jonathan Cuddy, an experienced pig farmer. Recognising the need to increase the return on the family's pigs, he opted to “add-value” by making Charcuterie, starting by taking a course at The School of Artisan Food. Having gone from strength to strength acquiring a reputation for unusual flavour combinations, Ispini have won awards for their produce - a BBC Food and Farming Finalist and Great Taste Golden Fork winner. Stand out products include Armagh Cider Chorizo, Fennel & Black Garlic Snacking Salami and Black Strap Molasses & Stout Lomo.
