Peter Hannan, owner and founder of Hannan Meats, is a great innovator. Based in the Northern Irish Countryside, the company source high welfare, slow-grown meat from around 120 farmers - most in Northern Ireland, all in Ireland. In the quest to finish to achieve “perfection, Peter first developed a Himalayan Salt Aging Chamber for his Glenarm Shorthorn beef Pork and Bacon are also finished with a flourish, spending 10 days in a Sugar Pitt to develop a remarkable sweet cure, a delicate balance between sweetness and salt that results in a crisp edge surrounding succulent meat. It creates an extraordinary flavour that has, as Hannan Meats says “charmed some of the most respected palates in the trade”
