Capreolus, Latin for Roe Deer, is an ethical, family-run artisan Charcuterie producer based in Dorset. Animal husbandry is valued highly by David Richards and his team. They source free-range, traditional- and rare breed meat and wild game when in season. Their Dorset Rosette Salami is spiced with a unique quatre epices blend, while their Smoked Mutton is cured with rosemary, juniper, black pepper, garlic & port then lightly smoked over beech wood.
