Weald Smokery, a well-established smokehouse in Flimwell, also boasts a food shop and café. Andrew and Corrine Wickham, the owners, believe they are one of the few UK producers still cold smoking traditionally in a brick kiln. Whole haunches of Venison are cured and cold-smoked over oak shavings for up to seven days. Duck breasts are cured in a mixture of spices and bay leaves and then hot smoked in a purpose built kiln with an open fire of seasoned Kent and Sussex oak..
