Liz Wakefield, based in Brighton, launched Sussex Gourmand in 2016. She sources grass-fed, naturally reared Sussex Beef and Wild Venison for her Bresaola. It is made by thinly slicing the meat and game, then curing it in a spice and herb mix which includes home-grown and foraged berries and finally lightly cold smoking it to create its flavour profile. She sells Bresaola in various forms including gift and inventive canape packs.
