A new production facility at Somerset Charcuterie means increased production while maintaining standards. It includes a Himalayan salt brick wall for maturing the meat which in particular, they claim, results in Culatello with a reverberating, deep flavour. Meat is outdoor- and locally-reared rare-breed and West Country ingredients are used to create products with strong regional identities. These include Salami with local cheese and cider as well as Lonzo, Coppa, Filleto and Cured Duck Breast
