Ben Dulley owns Salt Pig Curing Company. Former Head Chef at The Kingham Plough, Ben used his time there to learn about, and produce Charcuterie in its various forms for the menu and believes that a chef’s perspective gives him an advantage. Using rare breed pigs reared locally near Chipping Norton, he produces Air Dried Collar, Cheek, Rolled Belly, Cured Loin, Smoked Tenderloin and Salami and won Gold in The 2018 British Charcuterie Live Awards for his Rolled Belly
