Susan and Mark Reynolds of Piggery-Smokery specialise in producing bacon – and only bacon - in Alford, Aberdeenshire. Following redundancy, Mark chased his dream by studying Charcuterie at the Italian Culinary Institute in Calabria. His bacon, made with pork from a local farmer, is dry cured using a variety of ingredients then cold smoked. Varieties include Naked Toad “plain as the day you was borned” (sic), Pepperback Fin - Peppercorn & Juniper and Dark Dubhloch - Treacle & Ale
