Paul Miller of Melton Charcuterie is a comparative newcomer to making Charcuterie – he only set up business in January 2018.  His huge advantage is that his Dad is a pig farmer and his production unit is on the family farm. Paul chooses animals from the herd and then does all the production - salting, seasoning, curing and  smoking - himself. His is a nose to tail approach and he uses every part of the pig to produce a range of Charcuterie including Coppa, Guanciale, Salami, Pastrami and Pancetta
