Highland Charcuterie buy all their meat from local Highland producers using - whenever possible - free range rare breeds. The meat is seamed, cut and hand trimmed by themselves for their extensive range of products - Salami, Coppa etc. They forage for as many of the other ingredients as possible from the local area, such as chanterelles, bog myrtle, blackcurrants, seaweed and wild garlic to flavour their Charcuterie
