Established in 2014 by Marc Dennis, Duchy Charcuterie was born from Marc's experience in the meat trade and his passion for cured meat. Recently he moved to a purpose-built unit in Redruth, so he is now in a position to scale up production. Using quality ingredients including Gloucester Old Spot and Saddleback pigs, Heritage Breed beef from Yorkshire and local game, he is keen to marry traditional techniques with unique flavour combinations. Products include Duck Prosciutto cured in Orange and Telicherry, an Aged Beef Fat Nduja and Sobressada.
