Curious Meats, based in Stroud, cure organic pork for Coppa - thinly sliced from tender neck fillet and Guanciale - from the jowl. They source Gloucester Old Spot pork locally and then, using a variety of seasonings, produce a Black Pepper Guanciale and a range of flavoured Coppa that includes Maple - using a fine-grade Canadian Maple Syrup, Black Pepper, Fennel & Black Pepper, Paprika, and Paprika & Cayenne.
